The only way a player can be fully removed from a roster while they are under contract (unless they are traded) is via buyout. There is no "dropping a player" from a roster. Any player can be bought out at any time, but the owner can not re-sign that player via free agency until that season is over (So if I release a player during the 2016 MLB season I will not be able to sign him unless he is available in the 2017 free agency after the 2016 season).
Buyout Rates:
To buy out a player, the team will be required to pay the entire buyout up front.
For Example: Sidney Crosby is still under contract for four years, $10 million. If I choose to buy him out, I would be required to "pay him" $5 million dollars per season for the next four seasons. The buyout would be half the salary, or $20 million up front.
NOTE: A player cannot be bought out during the same free agency period he is signed.
